Ingredients needed for a delicious broccoli soup:
– Main ingredient: fresh broccoli – Vegetables: 3 potatoes, 1 carrot, 1 onion, leek, and chives – 1 bay leaf and allspice – 1 tablespoon of butter – 1 tablespoon of olive oil – 1.5 liters of vegetable or chicken broth, or stock – 1/3 cup of 18% cooking cream or 1/4 cup of 30% cream – 100 g of creamy processed cheese
Preparation method:
1. In a pot, sauté diced onion in olive oil until translucent. 2. Remove the green leaves of the leek. Wash the white and light green parts, cut them lengthwise into quarters, then slice crosswise. Add to the onion, season with salt, and sauté, stirring occasionally, for about 3 minutes. 3. Add grated carrot and sauté for another 2 minutes, stirring. 4. Add butter and diced potatoes, and continue sautéing for 2 more minutes, stirring occasionally. 5. Pour in hot broth, add the bay leaf and allspice, and bring to a boil. Cover and cook for about 10–15 minutes until the vegetables are tender. 6. Wash the broccoli, cut off the florets, and slice the green stalks into thin rounds. Add the broccoli to the soup, reduce the heat, and cook uncovered for about 5 minutes until the broccoli softens. 7. Add the crumbled processed cheese, stirring until it melts completely. 8. Gradually add cream to the soup, mixing well. 9. Garnish with chives and optionally some chopped basil. Serve with bread or crispbread.
